THE COURSE OBJECTIVE

  • Developing basic linguistic and cultural competences for the purposes of communicating in gastronomy.
  • Developing linguistic skills (reading comprehension, speaking and writing skills) at a basic level, adapted for the gastronomy industry.

HIGHLIGHTS

  • present (through a PPT presentation) historical outlines of French gastronomy
  • present (through a PPT presentation) Croatian gastronomic profile
  • make attendants familiar with the most popular regional gastronomic heritage
  • simulate a guiding tour both within the field and onsite classes
  • final exam (written and oral)

 

PLANNED SCHEDULE

Day 1

Welcome

  • Introductory information about the course (objectives, methods, and schedule of activities)
  • Facts about Croatian gastronomy profile
  • Historical overview of French cuisine

Day 2

 4 hours
  • Preparing participants for an individual course assignment – presentation of the project assignment:
  • Historical and social background influencing Croatian cuisine: Kvarner region - the city of Rijeka

Day 3

 

7 hours

A guiding tour – Rijeka

  • Presenting open market (diary, meat and fish pavilion)
  • Visiting fish restaurant (lunch break): Mediterranean cuisine from Croatian perspective

Students simulate a guiding tour supported by a professional guide

Day 4

 3 hours

Mediterranean perspective of gastronomy: research results made by participants

Final exam

Day 5

 12 hours  Field trip (wine tasting in Poreč and Motovun)
