Sažetak

HR: Definiranje ugostiteljstva kao sustava, njegovih podustava, te odnosa prema nadsustavu turizma. Identificiranje procesa unutar ugostiteljskog sustava, te prema okruženju; glavni i sporedni poslovni procesi. Poslovni proces kao logistički proces. Sinergija logističkih procesa i resursa. Definiranje modela organizacije ugostiteljskog sustava radi optimalizacije procesa. Logistički lanci potražnje i distribucije. Opskrbni lanac na poticaj ugostiteljskog sustava. Upravljanje opskrbnim lancem ugostiteljskog sustava. Zajednički i parcijalni poslovni ciljevi u opskrbnom lancu. Mogućnosti, pretpostavke i modaliteti optimalizacije informacijskih i prometnih tokova u opskrbnom lancu; korelacija s ostalim logističkim tokovima. Strategijska dimenzija upravljanja opskrbnim lancem u ugostiteljstvu s obzirom na istovjetnost i suprotnost poslovnih ciljeva sudionika. Upravljanje kvalitetom logističkog ugostiteljskog proizvoda. Pored uobičajenih metoda istraživanja koristit će se metode anketiranja i intervjua. Podaci prikupljeni terenskim istraživanjem, statističkim metodama će se selekcionirati, obraditi i klasificirati, kako bi se pristupilo odabiru primjerenih metoda vremenskih serija i kauzalnih (ekonometrijskih) metoda. Selekcijom odgovarajućeg kriterija optimalnosti, konačni je cilj ovog projekta definirati model opskrbnog lanca u ugostiteljstvu, koji bi imao univerzalnu primjenjivost. Ciljevi će se realizirati istraživanjem interdisciplinarnog i multidisciplinarnog karaktera, a što je uvjetovano sustavnim pristupom, značajkama logistike, kvantitativnim pristupom i strukturom istraživačkog tima. Sustavni pristup ugostiteljstvu, teorijske i praktične mogućnosti logistike u ugostiteljstvu, te model opskrbnog lanca u ugostiteljstvu s obzirom na odabrani kriterij optimalnosti omogućit će proširenje istraživačkog portfelja svakog pojedinog istraživača. Nove znanstvene spoznaje rezultirat će jačanjem znanja, kompetencija i vještina studenata u cilju njihove konkurentnosti na europskom tržištu rada te implementacijom teorijskih determinanti na razini ugostiteljskih poduzeća u cilju inoviranja logističkih procesa, optimalizacije lanca vrijednosti i rješavanja konkretnih problemskih situacija.

Capabilities, assumptions and modes aimed at optimizing information and traffic flow in the supply chain; correlation with other logistic flows. Strategic dimension of the supply chain management in the hospitality industry with regard to the sameness and opposition of business objectives. Quality management of a logistic hospitality product. In addition to the usual research methods, the methods of surveys and interviews will be used. Data collected through the field research will be selected, processed and classified by statistical methods, in order to access the selection of appropriate methods of time series and causal (econometric) methods. The ultimate aim of this project is to define a model of the supply chain with universal applicability in the hospitality through the selection of appropriate criteria of optimization. The goals will be achieved by using the research of interdisciplinary and multidisciplinary nature as a cosequence of a systematic approach, features of logistics, quantitative approach and the structure of a research team. The systematic approach to the hospitality, theoretical and practical possibilities of logistics in the hospitality, and a supply chain model in the hospitality with regard to the selected   criterion of optimization will enable the expansion of the research portfolio of each individual researcher. New scientific findings will result in improving the knowledge, competencies and skills of students in order to intensify their competitiveness on the European labor market and in the implementation of the theoretical determinants in hospitality companies in order to innovate logistic processes, to optimize a value chain and to solve specific problematic situations.
